Copy Cat Costco Cilantro Lime Shrimp is a spot on dupe of your favorite store bought appetizer. You can whip this up anytime you need an easy appetizer to serve without ever leaving the comfort of your home!
It’s amazing how things seem so much fancier when seafood’s involved.
Don’t believe me?
Add shrimp, crab, tilapia or any of the like to the menu and see if things don’t perk up.
I wanted something impressive to serve last New Year’s Eve, and nothing seemed to fit the bill.
Luckily, like at every other major cross roads in my life, Costco was there to save the day.
They have this trusty bevy of ready to cook, or eat, foods including seafood.
It’s amazing.
Costco’s cilantro lime shrimp was there to save the day and turn my New Year’s Eve gathering into a bonafide soirree.
As I’ve gotten older though, I really don’t feel the need or have the desire to combat the holiday crowds so I decided to recreate the recipe on my own, at home, and using shrimp I already had on hand.
And this copy cat Costco Cilantro Lime Shrimp was spot on.
Ingredients
To make this you’ll need:
- Oil– Extra virgin olive oil
- Garlic– Fresh minced garlic
- Shrimp– Medium shrimp, peeled and deveined
- Lime juice– Definitely use fresh for this
- Cilantro– Fresh cilantro, washed and chopped
- Salt and pepper
How to Make
Copy cat Costco cilantro lime shrimp is so easy to make!
To do it, heat the olive oil in a large skillet over medium high heat.
When the oil is hot, stir in the garlic and sauté it for about 30 seconds or just until fragrant.
Then, add the shrimp, stirring to coat them in the oil.
Cook the shrimp for 2-3 minutes per side- or until the shrimp’s cooked through, and opaque pink on both sides.
Transfer the cooked shrimp to a bowl and toss with the lime juice, cilantro and salt and pepper.
Serve the shrimp immediately, or cover the bowl with cling wrap, refrigerate, and serve chilled.
Enjoy!
Serving Suggestions
While this cilantro lime shrimp makes a fantastic appetizer on its own, it’s very versatile!
You can serve it warm over rice with a side of veggies for a light dinner, as a filling in a lettuce wrap, or over salad.
Storing Leftovers
Store leftover shrimp in an airtight container for up to 2 days.
Keep in mind the acidic lime may change the texture of the shrimp.
Tips and Tricks
- Generally you can substitute light colored oils for each other, but I don’t recommend substituting the olive oil in this recipe for a different oil. You want the flavor from it.
- Make sure to use fresh lime juice and not bottled since the lime is one of the key components of this dish.
- You can save yourself tons of time and hassle if you buy peeled deveined shrimp. Most grocers sell it as an option in their frozen seafood department.
