Ingredients

  • 1 lb 450 g eggplant
  • 1 tbsp 1 tbsp butter
  • 10 oz. 280 g halloumi cheese
  • 10 10 black olives
  • salt and pepper

Making low carb simple

Instructions

Instructions are for 2 servings. Please modify as needed.

  1. Cut the eggplant in half, lengthwise, and cut into slices that are 1/2" (1.5 cm) thick.

  2. Heat up a large frying pan with butter where you can fit both cheese and eggplant. Or, if you have a smaller pan, fry in batches.

  3. Add the cheese on one side of the pan and eggplant on the other. Season eggplant with salt and pepper. Fry over medium-high heat for 5-7 minutes. Flip the cheese after about 3 minutes, so that it is golden brown on both sides. Stir the eggplant every once in a while.

  4. Serve with olives.

Tips

You could replace the halloumi with any other white frying cheese of your choice.

Want variety? Swap the veggie! This dish can be made with other low-carb vegetables such as zucchini, cauliflower, broccoli or spinach. And feel free to use your favorite spices to give this dish more flavor—chili powder, paprika, onion powder, some herbs, or even freshly chopped garlic and basil.

    Try this with Panela cheese, a similar white Mexican cheese which is much less salty than Halloumi, though it does soften a bit. (Others that might work in a skillet would be Provolone or Kasseri). I am a salt-lover, but I find Halloumi cheese to be too salty to enjoy.

    one question; I bought eggplant it was a small size like the oriental one; does that be considered as one serving? Could you add the size of the eggplant for 2 servings Please? I made it with Queso Blanco cheese instead of Halloumi; it was cheaper and just as good. This dish was delightful

    I did notice with both Halloumi and this Queso Blanco the cheese does melt a little bit and deflates. Maybe I am cutting it wrong.

    I don't do eggplant because they are a little too carby for me. But that's just me. They really don't have a lot of vegetable nutrition in them either so I'm not likely to start eating them now. Just me and my take on this recipe.

    I have substituted with zucchini or broccoli; but I love this dish. I figured out why my cheese was melting; it didn't have enough butter/oil; and now I perfected it. Still have trouble finding Halloumi at my store without paying 12 dollars for it. So I use Queso Blanco. I bake the eggplant to lower the carbs, only to eat a little more of it. the combination is great.

    On this diet I discovered I love eggplant. I'll try it with a Queso blanco. And do it the way you just said

    I have never had or cooked with grilling cheese before so this was interesting to me. I find eggplant to always be a HUGE butter sponge and I love butter so no complaints here. It was a pretty easy to make lunch that I enjoyed.
