These keto chocolate truffles are quick and easy to make and will satisfy your sweet tooth this Christmas. Just be aware these are super addictive and the whole batch can disappear in the blink of an eye. These are an excellent gift idea for your favourite keto (and non-keto) friends. All you need to do is make the ganache, let it set and then roll into truffles. One of the things I love about these truffles is you can experiment with the flavours. We have added some orange essence to make jaffa flavoured truffles.

I love that these truffles are bite-sized, but yet so rich and decadent. Last Christmas we made up a double batch to take to our family get togethers. It was so nice having a contribution we could make that looked festive and was also keto-friendly. I was also happy knowing I could eat these keto chocolate truffles, along with everyone else, without blowing out my carbs.

I also love that these truffles don’t use any sweeteners or added sugar. The sweetness comes from the chocolate. When choosing the chocolate you are going to use, you need to think about who you are serving them to. If you are serving them to non-keto family and friends, opt for a lower percentage dark chocolate like 70-80%. If you are just making for yourself, a 90-95% will work better and keep the carbs lower.

Best Chocolate for Keto

As mentioned above, we recommend considering who you are making these for when choosing how dark the chocolate is you are going to use. We prefer to use chocolate with some small amount of sugar than a keto friendly sweetener, but there are some great keto friendly chocolate options that will also work really well in this recipe.

Australian options

  • Lindt dark chocolate from 70% to 95% available in Australian supermarkets
  • Whittakers dark chocolate range 70%-92% available in Coles in Australia.
  • Well Naturally 70% dark chocolate sweetened with erythritol and stevia. These are available in Coles and Woolworths in Australia. They also come in a few different flavours that would work as well.
  • Little Zebras dark chocolate available from Low Carb Emporium. These use xylitol as the sweetener and come in chai, mint, coconut, orange, lime, chilli and ginger flavours, so you can get really creative with your truffle flavours with these.

US Options

  • Lilly’s dark chocolate chips (Or the blocks)
  • Hu dark chocolate
  • Chocozero dark chocolate chips
  • Lindt dark chocolate 70-95%

Tips

  • Instead of rolling them in cacao powder, you could use crushed nuts or coconut flakes. I used crushed pecans in the above picture.
  • Experiment with the flavours. I used three drops of wild orange essential oil and they tasted like Jaffa. You could also try peppermint, ginger or cinnamon essential oils. The possibilities are endless!
  • Add some chai, pumpkin or gingerbread spice mix to the chocolate to take these to the next level.

Suggestions

  • When you add the cream to the chocolate mixture, just let it sit for a minute or two for the chocolate to melt and then stir.
  • You will need to leave the mixture in the fridge for 3-4 hours to let it firm a little bit before rolling into balls.
  • If you store mixture in the fridge overnight, let mixture sit out for about an hour to soften before rolling.
  • When rolling, the heat of your hands can start to melt the mixture, so roughly form, then drop into the cacao to coat and then work them a little more to form a ball.
  • Once balls are coated, store back in the fridge until ready to serve.

Ingredients

  • 100 ml pure cream (pouring or heavy whipping cream) (4 fl oz)
  • 100 g 85% dark chocolate (3.5 oz)
  • cacao powder for dusting

Instructions

  • Heat the pure cream over medium heat until just before boiling

  • Meanwhile finely chop chocolate and place in a small heatproof bowl

  • Remove the cream from the heat and add any flavourings to the cream at this point

  • Pour the heated cream over the chocolate and leave for 1-2 mins to melt. Then stir until all smooth and combined

  • Refrigerate for 2-3 hours until the mixture is firm enough to roll into balls

    If the mixture is too firm, leave out of fridge to soften slightly before rolling.

  • Roll into teaspoon size balls, initially keep the shape rough, as your hands may be warm. Then roll in cacao powder and perfect the shape of the ball. It is best to do this in a cool place if possible

      With the Granola just swap the butter for coconut oil. We served the chia pudding and the granola cooked with coconut oil to our vegan friend for breakfast and he now makes the chia pudding at home.
